Chili

Everyone here seems to love soups. I like my soups nice and chunky that's why I love chili. Here's a family recipe that is delicious for a cold winter day.

In a large pot, brown:

  • 1 lb. lean ground beef
  • 1/2 a chopped onion
  • 1 clove of garlic (minced)
  • 2 Tbsp. oil

Add:

  • 1 28 oz. can of pureed tomatoes
  • 1 10 oz. can of Rotel diced tomatoes and green chilies
  • 1 16 oz. can of pinto beans
  • 1 16 oz. can of ranch style or chili beans
  • 1/2 can water (8 oz.)
  • 1 1/2 tsp. salt
  • 1/4 tsp. cumin
  • 1/2 tsp. oregano
  • 2 Tbsp. chili powder
  • 1/2 tsp. black pepper
  • 1/4 tsp. garlic powder
  • 2 tsp. paprika

Let simmer for at least 4 hours. Yummy to serve with corn bread.

Just wanted to say that I have had it and it is FABULOUS- and so is the cornbread! Katherine, I am so excited about your food blog. I always feel like I need new recipes, so here goes...
