Baked Oatmeal

3 cups old fashioned oatmeal
2 tsp baking powder
1/4 cup sugar
1 1/2 cups milk
1/3 cup cooking oil
2 eggs
chopped fruit, ie. apple & cinnamon (opt.)
dried cranberries and/or raisins (opt.)

Preheat oven to 350 degrees. Grease a 9 x 13 baking pan. Mix together the oatmeal, baking powder, sugar, milk, oil and eggs. Add optional fruits as desired. (We usually do a peeled,finely chopped apple and cinnamon. Blueberries and peaches are good too.) Bake for 25 to 30 minutes. Serve with milk or whipped cream.

My son, who would not eat oatmeal, requests this at least once a week. I half the recipe and do it in a 8 x 8 pan. It reheats well.
